Abstract:探讨了高速剪切乳化预处理对提高玉米蛋白粉酸性蛋白酶酶解效果的作用.结果表明,利用高速剪切乳化方法在7000 r/min下预处理玉米蛋白粉达1h,可使玉米蛋白粉的颗粒度从420μm降到10μm左右.在此情况下,采用酶活力为50000u/g的酸性蛋白酶在50℃,酶与底物比10%,底物浓度80g/L和水解时间24h的水解条件下(不加碱维持水解液的pH),可将玉米蛋白粉的降解率和蛋白质水解度分别提高到70.19%和58.64%.
