Abstract:引入过氧化氢以抑制大豆蛋白酶水解反应中伴随的美拉德反应,减少色素生成.结果表明,在水解条件下,过氧化氢能有效抑制美拉德反应在大豆蛋白水解过程中的发生,减少色素生成,而不影响大豆蛋白的降解率和水解液的水解度.向水解体系中加入1‰过氧化氢,水解液色素抑制率可达到36%.并且通过水解物氨基酸组成分析得到,只有蛋氨酸遭到部分破坏.
