酸性蛋白酶水解玉米蛋白粉反应过程的研究

Abstract:在底物浓度100 g/L、温度55 ℃、酶与底物比12%的反应条件下,对黑曲霉酸性蛋白酶水解玉米蛋白粉反应过程进行研究.结果显示,黑曲霉酸性蛋白酶不能完全水解玉米蛋白,降解率和水解度随水解时间延长均呈现出水解初期增加较快,然后趋于缓慢的问题.产生上述问题的根源在于,黑曲霉酸性蛋白酶在水解玉米蛋白过程中存在自身失活和水解产物对固体底物降解反应的竞争抑制作用.
