可食性活性涂膜在鲜切果蔬保鲜中的应用

Abstract:Edible film is a kind of selectively permeable membrane which is made of natural edible material. It can coordinate the gas exchange, reduce the water loss and the rot rate, and prolong the shelf-life of fruits and vegetables. Edible coating film has gained a wide concern in the fields of food package and food storage. Fresh-cut fruits and vegetables had the characters of fresh, convenient, and rapid, which were widely applied in catering industry and retail industry. Edible coating as carrier of food adding agent were applied in fresh products. It incorporated with active adding agent that would prolong the shelf life, improve quality of fresh-cut fruits and vegetables, and reduce the increasing of pathogenic bacteria. Edible coating had been applied to preservation for fresh-cut fruits and vegetables as a kind of preservation technology of food safety. The application of edible coating classification and adding active ingredient of antimicrobial, antioxidant, nutrient on fresh-cut fruits and vegetables was reviewed in this paper. The purpose was to develop functional edible coating for preservation on fresh-cut fruits and vegetables.
