Abstract:冷害导致果蔬代谢失调,严重影响果蔬的品质和耐藏性.水杨酸(salicylic acid,SA)作为一种诱导果蔬产生抗生物胁迫和非生物胁迫反应的内源信号分子,在调节果蔬的生理生化过程中发挥着重要作用.该文简单介绍了冷害对果蔬生理特性的影响,综述了水杨酸处理提高果蔬采后耐冷性的生理生化机制,为减轻果蔬冷害提供了一定的理论依据.
